Hunting, fishing, grilling and chilling. The culture here requires that good food and good times be the primary component in the fabric of our lives.

Josie's Steakhouse 4/22/2009
If you drive to the edge of the known universe, take a left at Arkansas and continue to Waldenburg, you'll struggle to understand many things. Like who lives out here? And why? Well the answer is generally rice farming, where do they eat? Using the term oasis to describe Josie's Steakhouse would be an understatement. In a sea of endless ricefield landscapes, Josie’s sits at the intersection of seemingly the only two roads there are. Walk in on a Saturday night, and you'll wait forever to find out why it's made the list. The food is remarkable and the atmosphere saturated with good spirits and good times. It’s obvious there isn't much else to do around there, but it makes the joint that much better. Somewhere between the Boars Nest and a unisex bachelor party, Josie's enjoys the benefits of nearby dry counties and a generally nightlife challenged region. There are seasonal patrons with farmers and waterfowl hunters at times and the rest of the year, locals from miles around keep the door hinges from rusting shut. It's hard to describe for sure, but a killer place to spend an evening if you ever get close enough to find it.
The Ark 4/22/2009
If Bo and Luke could shake off Roscoe somewhere around Riverside, Alabama, they'd surely duck into the Ark for some grub. Few folks know why it's called the Ark, but everyone knows why you go there. They've been serving up fried catfish, hushpuppies and cold beer to locals for a long time. The restaurant's name came from the prohibition days when it was speak easy barge that would float on the “international waters" of the Coosa River to avoid the law. In the years since it's evolved into as good a catfish house as you'll find anywhere. The Ark's charming history includes race car driver favorite from the glory days of stockcar racing, as it sits just a couple miles downstream of the famous Talladega Superspeedway. We can probably just leave it at that.
Bea's Restaurant 3/17/2009
When you step out of you time machine and into Bea's Restaurant, you may second guess your decision at first. For over 50 years, Bea's has laid down meat-and-three style grub for diners the same way. Each table seats 8-10 people and are actually huge lazy susans. It's likely that you'll be sitting with strangers and the carrousel of groceries spins a random assortment of longtime favorites. Spaghetti, slaw, white beans, bread, onions and fried chicken. The chicken is, believe it or not, a proprietary cut, split thigh of all white meat, compact and delicious. Other than the unique chicken chop, the food is pretty standard-fare meat-and-three type grub. The line is long for Sunday lunch, but sneak in another time for taste of a legendary Chattanooga eatery.
La Altena 3/17/2009
When it comes to dives, you tend to think burger joint. On the south side of Chattanooga, there's a Mexican joint that should make your list. "La Altena" is tucked away on Main Street and Broad, and from the outside manages to put first-timers off, frequently. Show up at lunch, and your doubts will fade as you wait for a table. The warning is that assembly line faux-Mexican cuisine is nowhere to be found here. The food is made to order from an easy to read menu. You'll need to ask questions since mainstream names don't show up much on it. Get a chicken fajita quesadilla if you get nervous, it's enormous. The chorizo and steak "Mojado burrito" will satisfy the need for a savory-spicy dish away from the norm. Adventurous diners will want to order the incredible Tortas. The Torta Carnitas is shredded pork, pico de gallo, shredded queso cheese and avocado served on a toasted buttery roll. You should probably order two, since everyone at your table will be jealous. Ask for the "other salsa" also when you sit down, and don't be afraid to order a few different tacos added to your entree.

Taking burger joint advice is a like movie review. You have no idea what the baseline is or even the criteria for judging. There are folks that will pay good money to see The Fast and The Furious sequels. Assuming you’re into hand-pattied burgers and a 15 minute wait, there’s joint on Chattanooga’s north shore that deserves your attention. A burger pro’s dream, Tubby’s is the quintessential burger joint. The simple menu’s regular burger isn’t fancy, it’s delicious. Those who still need to be impressed can order the 1 pound “Gut buster” with a 15 minute wait. It’s a thoroughly unremarkable experience right up to the point at which you bite into your burger. When trading atmosphere for a hog-leg burger seems like a good idea, swing by Tubby’s order a “Gut buster”, tater-tots and a side of ranch and start meditating. You’ll probably want to take a picture before you start eating.
